Monday's Menu

Here’s my menu plan for this week:
MONDAY: Breakfast for dinner — Bacon cheddar waffles, fresh fruit, and scrambled eggs
TUESDAY: American Chop Suey, to make this more delicious add 1 cup cheddar cheese, top with bread crumbs and bake @450 until golden brown, and a loaded garden salad
WEDNESDAY: Pizza night with quick and easy home made pizza dough and yougurt fruit pops
THURSDAY: Jasmine Rice with teriyaki chicken with fresh veggies and sweet scones with fresh strawberries and homemade vanilla whip cream for dessert.
FRIDAY: Meatloaf, green beans, and crockpot applesauce (I won’t actually be making this, I made a ridiculously huge batch and canned it all a few months ago, but I just love this recipe so I had to share!)
SATURDAY: Roast with caramelized onions, baby red potatoes and broccoli puff
SUNDAY: (we’re not really Superbowl people but this is the day to my favorite type of dishes…appetizers!)
  • 2 fondues- red lobster fondue and Kraft swiss cheese fondue with cubed pumpernickel and sourdough bread
  • taco soup
  • onion rings
  • hot wings
For the swiss fondue, this by far and aways the BEST I’ve ever had and it is also the easiest to make!  Take 2 packs of Kraft pre-sliced swiss cheese, 2 cups white wine, 2 tbs garlic, white pepper, cayenne pepper, nutmeg.  Simmer wine, garlic and spices for about 10 minutes (enough time for the alcohol to cook off), gradually add the cheese, stir and serve!
